  • I don't know many people who first got into craft by leaping to IPAs right away. If you want your place to be accessible for someone who's only drank Bud all his life you need to have a pilsner/lager, a porter, a stout, maybe a hefeweizen on your menu. But IPAs are the cash cow. Cheaper and quicker to make and it's what most regulars (IMO) gravitate towards. Pretty rare to step in to a place that has 3-4 different porters. Likely just 1 if that. But having 3-4 different IPAs seems typical at this point unless you're really small.

    Stereotyping but for women who normally drink wine their gateway seems to be ciders/sours.

    • Yeah, the bar I frequent has 2 porters and 2 stouts on draft. Probably a dozen IPAs and 5 or 6 sours.

      I like IPAs but there are several out there that taste like Pine Sol - whereas a stout is almost always palatable.

        I'm not so sure that this is as much about what customers want so much a sit is about what brewer want to make.- no matter how hard they want you to believe it. Most of them believe it themselves.

        The truth is that it's safer (more forgiving) to make those styles than it is make a pilsner or light lager. You can hide a lot of your mistakes by adding hops or more dark malts. And sours are really just ordinary beers that got mixed up with the wrong crowd of microorganisms.

        Just don't try arguing that with the balding bearded guys sitting at the other end of the bar.

          Yeah almost any ordinary stout will be at least decent. Possibly the single safest category for me. It's only some of the barrel-aged stuff I avoid.

          Heh, I like the Pine Sol ones. You ever have a spruce beer?

            Yes, in Philly. It was Ben Franklin’s recipe. I finished it. I didn’t get a second. I’m not in love with the Pine Sol IPAs, either, but I can drink them.

            • Edmund Fitzgerald is still just about favorite porter. Platform was pretty good, but not irreplaceable. Shame to see them go, but someone else will come up. Really enjoying good sours, even though I haven't totally convinced myself it's a total college freshman girl drink. I mean, my daughter can drink them. I throw back a strong Double IPA when the doubts become too much.

              Mostly i just enjoy trying different beers, styles, breweries etc. Like anything, it's a bell curve -- most of the time it's beer and beer is good; every once in awhile its hot garbage and every once in awhile you find a potential fridge staple.

              And, yes, I still miss Coach Bryant.
