I don't want to paint it like we're friends, we are not, but I have talked with him, and I believe he sincerely tries to act in a just and honest manner. His beliefs are different than mine, but he has a developed moral compass that guides him even when it's not to his personal benefit to chose that path.

Sessions is an utterly vile character. Whilst I understand the point you're making, and genuinely appreciate the opportunity for a nuanced argument to be offered and evaluated in an Internet forum, because that is no easy task, it's a real stretch to use the word honorable. The formal definition of the word is broader, and includes the notion of respect and regard earned. Can't give that to Sessions. The opposite, really. We could easily find another word that captures the point you're making without awarding him traits that describe the opposite of what he really is. IMO.

I do not agree with his ideology, at all, but I respect him in that I believe him to be forthright and honest and true to himself and his intention to do what he feels is right. I am reminded of when he was asked if he believed Roy Moore or his accusers, he could have easilly dodged the question but said he believed the women, or when he recused himself in the Russia investigation, or this latest Trump response, and even years ago on the campaign trail in Alabama when asked if re-elected to the Senate if he would support a pork project dear to the very hearts of the people he was talking to and he said something to the effect of, 'No, I have looked at that and do not think it to be the best use of public funds.'
Without getting into a battle of definitions or our own lexicons, I will say I respect him. Many others do too. So, fair enough. You find him to be dishonourable; I do not hold the same belief. I guess being honorable is dependent on one's perspective. And with that, I hope to never feel obliged to defend him again.

I too hope you never feel those feelings again. Can imagine it to be a dark place. Words have meanings though, and whilst we can agree to disagree on Sessions, that word is a precise one. I would be happy to help you out with some suggested alternatives. DM me for rates and availability.
